Over 40 years ago in the Adirondack Mountains the Wallace family started boiling sap they collected in metal buckets on the family farm into maple syrup. Three generations later we are still on the same land, except now we have expanded to over 5,000 taps and we are the largest maple syrup producer in Warren County. Despite the time that has passed and the amount we have grown, what remains the same is how we make maple syrup and this is the most important part, and the part that sets us apart from other large producers. Our syrup is made using a wood fired evaporator just like in the old days. We also manually watch our temperatures and hand draw our syrup when it is at the perfect temperature, no gadgets here just intuition and experience.
All of these old traditions help us let nature be its most delicious.
